| 2.4.1.21 | physiological function | double mutant rice lines lacking both starch synthase SSIIa and starch branching enzyme BEIIb show similar or greater seed weight than lines lacking only BEIIb, and plant growth is not affected. A line lacking SS2a shows increased short amylopectin chains resulting in a lower gelatinization temperature. Starch granule morphology and A-type crystallinity aere similar between the line lacking SSIIa and the wild type, except for a mild chalky seed phenotype in the line lacking SSIIa. The presence or absence of SSIIa hardly affects the amylopectin structure under the BEIIb-lacking background. The amylose content is significantly higher in the double mutant lines than in the BEIIb-lacking lines. Starch crystallinity is greater in double mutant lines than in BEIIb-lacking lines | Oryza sativa Japonica Group |
