Penicillium oxalicum Penicillium oxalicum SAEM-51 is a hyperproducer of chitin deacetylase. Microwave irradiation (10 sec) has about 2fold enhanced level of extracellular but not intracellular enzyme production. Glucose as compared to chitin or colloidal chitin results in increased levels of enzyme production. However, replacement of glucose with chitinous substrates prolonges the duration for enzyme production up
