The maximum hydrolysis rate is observed when ultrasound/microwave irradiation shock (ultrasound of 50 W combined with microwave irradiation shock of 60 W at a sock rate of 20 s/min for 25 min) is used in which the dextran hydrolysis increases by 171.13% compared with routine conventional heating.
